Vegetarian Mexican eggs

This is a Jamie Oliver recipe minus the good stuff (chorizo). I say that because chorizo is at the heart of this recipe and at the time of creation we didn't have a decent substitute. In the future I would use Quorn sausages and plenty of paprika, chilli flakes or real chillies. 

Here's what we did! 

Ingredients
- One medium potato 
- One red pepper 
- 2 eggs 
- Handful of cherry tomatoes 

Method:
1. Peel and chop the potato and place in Pyrex dish with a knob of butter, peppers and cherry tomatoes. Place in oven at 200c and cook untill the potatoes are looking crispy, about 15 mins 
2. Make two wells in the mixture and crack the eggs into the wells. Place back in the oven to bake to liking. I like mine hard so we baked them for an extra 5-10 minutes. 

And there you are! Mexican eggs! The second I find a replacement for the chorizo I'll let you know. For now though, happy brunch!
