Burrito in a Bowl 2.0

Very simple, pretty quick, and super delicious dinner idea for Mexican food lovers.. I give to you, the burrito in a bowl 2.0! Bursting with fresh lime and coriander flavours, this dish is truly a masterpiece. I only wish I had made more!
Ingredients:
- olive oil
- red pepper
- yellow pepper
- onion
- avocado
- Can of black beans (400gs)
- 2 limes
- 3 small sweet potatoes
- Coriander
- Brown rice
Seasoning: paprika, salt, cumin, chili powder
Method:
1. Wash, and cut the sweet potato into chunks. coat in olive oil, salt and a tsp of paprika. Place in preheated oven (250c) for 30 mins, or until crispy.
2. Pour black beans into sauce pan (undrained) and add 1/2 a tsp of paprika, 1/4 tsp of chili powder and half a lime. Leave to simmer until ready to serve.
3. Pour brown rice into a sauce pan (enough for three people), add boiling water and simmer until cooked.
4. Chop an onion, red and yellow pepper. Stir fry in oil and add cumin to garnish.
5. Arrange on a dinner plate, like above, and garnish with coriander, a lime wedge, and an avocado chopped.
The fresh flavours from this dish are absolutely gorgeous, added to this the juxtaposition of hot and cold temperatures really excites the taste buds!
