Ginger and Lemon Vegetarian Stir Fry

Who doesn't love a good stir fry? With endless combinations of veggie goodness, a healthy and delicious, guilt free indulgence is yours in a second! Hurray! 

This recipe makes enough for 2 

Ingredients 
2 nests of dry egg noodles 
2 garlic cloves 
1 Red onion chopped
2 Carrots chopped  
Four stems of brocoli chopped
Few Sugar snap peas 
Few Baby corn 
Quorn chicken pieces (enough for 2)
2 tbsp Soy sauce 
1/2 lemon 
2 tbsp Sesame seeds
3 tbsp Sesame oil 
Salt and pepper 

Recipe:
1.Cook the quorn chicken pieces in the wok on a medium setting untill defrosted and golden brown in 1tbsp of sesame oil and garlic
2. While cooking quorn, add boiling water to noodles in a pot and cool untill soft.
3. Turn up the heat on the wok until steaming add remaining oil and vegetables 
4. Add soy sauce and lemon once vegetables begin to soften and stir with a wooden spoon 
5. Once noodles are cooked and vegetables softened, mix and add sesame seeds! Garnish with salt and pepper 

And presto! Stir fry in under 10 minutes!
