Vegetarian Pad Thai

Pad Thai, what a gem! I had a few of these while I was travelling in Thailand, but unfortunately it was only the odd time.. For some reason the vegetarian version was rare to find! I made a few changes while I was experimenting in the kitchen.. Hopefully you'll enjoy this variation, I did, but perhaps I was too lazy to try again! See what you think! 

Ingredients:
- 1 tbsp sesame oil 
- 1 tbsp chilli oil 
- garlic clove, crushed 
- half an onion 
- couple mushrooms, chopped 
- mixed veg (broccoli, carrot, collie flower etc) 
- 1 egg
- tbsp soy sauce 
- noodles (I only had pasta.. Oops)
- half a hand full of sesame seeds (optional)
- cashew nuts



 What's the plan? 

1. Hear the pan and the oils together 
2. Add garlic, onions and mushrooms and brown them. Mean while cook noodles (or pasta)
3. Add the mixed veg to soften 
4. Add egg and scramble with veg till cooked
5. Add soy sauce, noodles and nuts to veg
6. Season with salt, pepper and sesame seeds, and enjoy! 

Really simple and quick Pad Thai variation, hope you enjoy it and find it as yummy as I did!
