Veggie Sushi

Time consuming and very filling... That's how I would describe the process of making sushi! Don't get me wrong, I really enjoyed the challenge of making it and we laughed so much after so many failed attempts (you gotta laugh) but it's not something I would be rushing back to make. The combination of so much seaweed and Chinese rice wine (similar to saki) was also a mistake, guaranteed sore tummies in the morning... Don't ever try Chinese rice wine. Ever. 

We decided to make cucumber and mango sushi, then if we were still hungry we'd make avocado rolls. In hindsight  this was a ridiculous idea.. We were so full we couldn't even finish the mango and cucumber! I think we made a grand total of 4 rolls and ate about 2.5! 


You'll need:
- 1 cucumber
- 1 mango
- 1 packet of seaweed nori
- About 50gs rice 
- 1 tsp of rice wine vinegar 
- 2 bamboo rolling mats (or cling film will work!)

Recipe:
1. Cook the rice and leave to cool until cold. 
2. Chop up all veggies 
3. Mix vinegar with rice to make sticky 
4. Place seaweed on bamboo mat (shiny side down)
5. Place a thin layer of rice on the seaweed leaving an inch at the top free.
6. Insert veggies
7. Use bamboo to roll the seaweed over the rice and veggies. Continue to roll until you reach the free inch. Wet inch with water. Then continue to roll! 
8. Hold it in place for a little bit and then you're ready to chop it up! 


This can get very messy with sticky rice going everywhere, but that's part of the fun! I actually really enjoyed the challenge of making it myself, however the taste is something i'll leave to the professionals!
