Sweet Potato, Broccoli and Ginger Soup

Tonsillitis you cruel mistress... 

Don't get me wrong, I love eating ice-cream and watching episode after episode of House of Cards as much as the next person, but when the only vitamin you're getting is Vit F (F as in fat) you can hardly expect to get better.

So here's an easy way to get healthy (liquid) food into you in a flash! This soup is absolutely delicious and now i've plenty more for dinner and lunch again tomorrow!

Recipe:
- 1 Onion 
- 3 Sticks of celery 
- 3 Cloves of garlic
- 1 Head of broccoli 
- 1 carrot
- 300g Sweet Potato (or just three mini sweet potatoes)
- 2 Tablespoons olive oil 
- 2 Teaspoons salt
- 1/2 Teaspoon peper
- 2 Teaspoons cumin
- 4-5cm Piece of fresh ginger 
- 1.25 Liters of water or veg stock (add more if you like your soup less thick)


Method:
1. Roughly chop onion, celery, carrot and garlic. 
2. Cook together on a medium heat for 15 mins with the olive oil - cover with lid while cooking
3. Add in potato, broccoli, spices and grated ginger and stir for 3 mins.
4. Add in stock and bring to the boil. 
5. Cover with lid and let soup simmer for 30 mins.
6. Remove from heat and blend with a stick blender.
