Vegetarian Massaman Curry

Who doesn't love a massaman curry? So hearty and filling, perfect for the cold weather atm. I fell in love with this curry in Neon restaurant, Dublin, months ago and I've finally gotten around to trying to recreate it! This recipe isn't far off the magical morsels inhaled that night, and I got it off the back of a jar! How fab!
Ingredients
- 2 tbsp massaman curry paste
- 400mls coconut milk
- 1 sweet potato
- 3-4 baby potatoes
- 1 onion
- couple mushrooms
- (greens would be a nice touch but I didn't have any )
- basmati rice
Recipe
1. Fry onions and mushrooms in large pan untill golden
2. Add milk and paste, bring to boil
3. Add potato and sweet potato and simmer until potatoes are soft.
4. Cook rice while curry is simmering.
