Chestnut Stuffing

This year was the first of many Christmases where I will be featuring a lot more in the kitchen #vegetarianrights #noturkeynocry
Normally my mother kicks everyone out complaining that we are in her way and delaying the dinner.. Not the most creative atmosphere. So I decided the only way the vegetarians would enjoy something other than boiled veggies would be to cook in advance. So here we go!
Veggie chestnut stuffing 2.0
I took inspiration from martha Stewart, but in the end I forgot some of the ingredients and was a few glasses of wine down so it's more mine than hers, so ha!
Ingredients:
Makes enough for 2 and then leftovers
- Chestnuts, about 20, roasted
- one small yellow onion
- hand full of sage, chopped
- three slices of bread, crumbed
- half a litre vegetable stock
- new knobs of butter
- salt and pepper to taste
(What I forgot, but feel free to add)
- few sticks of celery
- handful of parsley
Throw all the dry in the food processor, then add your butter and stock, and cook away! Say 200 C for about 20 minutes should do the trick! And then keep in the fridge till ready to serve!
