Vegetarian Burrito In A Bowl!

Viva los burritos!!


I could eat burritos all day, everyday... They are my life! Dublin has some nice burrito joins if you're out and about like Tolteca and Boojum, but if you're chilling at home in your pjs and need that Mexican hit then look no further! 

I present to you, the vegetarian burrito bowl! (No wraps nessisary, because wraps are hard)

I love this recipe because it's super quick, bursting with flavour and If you make too much you can always chuck it in the fridge for tomorrow. Too much guacamole or salsa is a bad thing, said  NOBODY EVER!

Ingreadiants and recipy:
This makes enough for two (with a little left over for seconds!)

For guac:
1 half lime (or lemon)
1 avacado 
Few sprigs fresh coriander, chopped 
1/4 diced red onion 
1/2 diced tomato 

Peel and de-stone your avacado, chop it up and mash with a fork in a bowl. Mix in your lime juice and chuck in the rest of the ingrediants... Simple. 

For salsa:
1 1/2 tomato diced 
1 half lime (or lemon)
1/4 diced red onion 
Few sprigs fresh coriander, chopped
(Optional diced jalapeño) 

Again, super easy, just throw all your ingreadiants into a bowl. Adding more lime, onion, corriander, jalapeños, etc to your liking. Done!

For vegetables:
2 tbs of sesame seed oil (vegetable oil is fine)
1 clove garlic
1 red bell pepper
1 yellow bell pepper 
1 yellow onion
(Throw in any additional veggies you like, broccoli, mangetout etc, I like baby corn) 
1 inch Fresh ginger grated (or really how ever much you like)
1/2 tsp of cumin 
1 400g can of kidney beans 

Get out a large sauce pan, preferidably a wok. Fry the veggies in the oil, allowing them to soften, for about 10 mins with the garlic. Add the ginger and the cumin to give flavor then add drained kidney beans to soften and season. Boom they're done too!

For rice (idea stolen from boojum):
120g easy cook rice 
Any left over lime juice 
Chopped fresh coriander 

Cook the rice. Mix in the lime and chopped coriander just before bowling... Mmm zesty!

Now all you've to do is grab a bowl. Add some lettus to the base, throw in the veggies, a dollip of guac, topped with salsa, maybe some cheese or sour cream if you have it and ba-da-bing bad-a-boom you're in flavour town!
