Vegetarian Soba Noodles

For my birthday this year my sister bought me a cookbook from this cool vegetarian restaurant, Leon, in London... I tried not to look offended as I opened it..

One of my favorite recipes from the book is their veggie soba noodles. 1. They are yum hot or cold (great for work lunch) 2. They require only one pot and one bowl (so easy, so not messy) and, 3. You can use any veg you have in the fridge, the sauce is the real star of the shower here! 

 
Ok let's get started! The recipe makes enough for 4 (we feel 2 is more accurate) and takes about 15 mins to make! Hurray!

Ingreadiants:

For the sauce: 
2 tbs warm water 
2 tbs smooth (or chunky) peanut butter 
2 tbs rice wine vinigar (I used white wine by mistake and it was great!)
2 tbs sesame oil 
2 tbs fresh ginger (I forgot it this time round and it's nice without ginger too!)
1 tbs soya sauce 
2 tsp honey 
1 clove of garlic 

Just throw all of these into a bowl together and you got a sauce, easy peasy! 

Noodles:

1 Pack of soba noodles (I used egg noodles, or you can use rice or ready to wok noodles .. Any noodles really!)
Toss them into a pot and cook. Chuck in any veg you have in the fridge. I used a carrot and a few broccoli florets. 

When they are ready add the sauce and dig in! Easy as!
