Cormac's Homemade Granola

He showed me how to make it... So what did he really expect? This granola tastes so good, lasts so long (that jar is actually huge), and is so much better for you then the stuff you buy in the supermarket. Winner all round! His family also had the really smart idea of taking it into work in little mason jars with Greek yogurt and berries... How cute is that?


Ingredients:
- 1 tsp of coconut oil
- 4 tbsp maple syrup
- 1 tbsp vanilla extract 
- Porridge oats (enough to spread evenly on a baking tray) 
- Selection of nuts, or seeds, or sultanas, or coconut flakes for flavouring


Recipe:
(Pre heat oven to 180 degrees)
1. Heat the oil in a sauce pan and add the maple syrup and vanilla extract. 
2. Spread the oats out evenly onto a cooking paper lined baking tray 
3. Drizzle the syrup over the oats 
4. Cook for 20 minutes (until golden brown)
5. Pour into a jar and mix with your favourite additives (we used walnuts, hazelnuts, almonds, and coconut flakes!)
