Veggie mango tacos

I had hoped that these would turn out more colourful considering all the goodness that goes into them. Imagine bright purple (beetroot), vibrant green (lettus), glissoning yellow (mango) and obnoxious orange (sweet potato), but alas you'll just have to take my word for it when I say these are really healthy and yummy. I was inspired from my trip to Taco Taco and decided to experiment with the flavours.. I think I'll need more practice before I'm up to their standard, but I still loved these regardless.
Ingredients:
- 1 sweet potato
- Dash of olive oil
- 1 beetroot shredded (**watch out! This guy can, and will, ruin any clothes you wear while handeling**)
- 1 mango
- Pot of houmous (for spreading)
- Handful of lettuce
- Sprinkle of cashew nuts
- Enough Quorn chicken style pieces for two people
- Soft taco shells (I used small wraps that I cut in 1/2.. Couldn't find tacos 😁)
- Dash of paprika and chilli powder
Recipe:
Sweet Potato Fries:
1. Pre heat oven to 200 Degrees (fan oven)
2. Wash and cut your sweet potato into thin fries. Then soak in water to remove excess starch (that way they'll be more crispy and less mushy)
3. Dry the fries, and toss with a tsp of olive oil.
4. Spread on a baking tray and cook for 30-40 minutes (make sure to turn them after 15 minutes)
Quorn Chicken:
1. Heat oil in a pan and add enough Quorn for two.
2. Cook until browning.
3. Season with sprinkle of chili powder and paprika.
(I thought these needed more spice, so maybe add a fresh DESEEDED chili to the mix to liven it up)
Tacos:
1. Place three tacos on a plate.
2. Spread spoonful of houmous on each.
3. Wash, peal, and grate fresh beetroot onto each taco.
4. Sprinkle lettuce on each.
5. Cut mango in half and divide chunks evenly between both plates.
6. Divide Quorn chicken between both plates
7. Sprinkle with cashews
8. Pierce with skewer to make sure they stand!
These are fun to make if you've got a little time on your hands. The flavours are definitely worth the wait. The sweetness of the mango and beetroot mixed with the spiciness of the Quorn is really interesting and unusual, you'll really impress with these! Or if you want a healthier option up the lettuce and beetroot and ditch the tacos for a salad version!
