Vegetarian Black Bean Stir Fry

This recipe is so simple and its a great way of getting lots of veggies into you. Its perfect for taking into work, or school, as a packed lunch of leftovers. And since any vegetable works well with it you can use up whats left in the fridge... no more rotten veg! The reason this recipe is so quick and simple is because we'll be using a stir in sauce.. cheating? maybe. But honestly it tastes so good who really cares?
Ingredients:
(really anything in the fridge)
- 1 Red pepper
- 1/2 Onion
- Baby corn
- Mangetout
- 1 Carrot
- Mushrooms
- Quorn steak style strips (honestly these are unreal, and a great source of protein)
- Glug of oil
- Black bean stir in sauce
- Basmati rice
Recipe;
1. Heat the oil in a deep pan (I used a wok). Cook the Quorn until its defrosted.
2. Chuck in the onions to brown them with the Quorn.
3. Toss the rest of the veg into the pan and fry until desired tenderness (I think its nicer a little crunchy)
4. Stir in the black bean sauce and cook for 1 or 2 minutes more.
5. Serve with rice.
