Halloumi Kebabs

Heat wave in Ireland? Can only mean one thing... BBQ!! We get to have about 4 BBQs a year on this Emerald Isle and I don't know about you guys but I'm sick of being the only veggie at the party and eating bread all day! Well guess what? No more! No more sitting in the shadows pretending you're not hungry! 



Pictured above are Quorn sausages, bbq corn (yes please!) and halloumi kebabs, they are a little tricky because the halloumi really sticks to the grill, but if you have a knife to scrape it off with out tearing the cheese you're sorted! 

Ingredients:
- 1 block of halloumi
- 1 red pepper
- 1 red onion 
- 4 mushrooms 

Lemon and thyme sauce:
- 2 tbsp lemon juice 
- 2 tbsp of olive oil
- 1 tsp of Dijon mustard 
- 1 tsp of thyme 


Method:
1. Soak your wooden kebab sticks in water for at least a half hour so that they won't catch fire on the bbq.
2. Chop up your veggies and halloumi (chop the halloumi thick because it tends to break apart easily).
3. Mix together all the sauce ingredients.
4. Dip your cheese and veggies into the sauce as you skewer them. 
5. Fire them on the grill! 

Remember the cheese is sticky!! Before turning them as they cook have a knife handy to scrape them free!
