Chilli Con Veggies

This is nacho average chilli my friends. Found the recipe on Jamie Oliver's website and it is to die for! Sure there's a little effort that goes into it, but it lasts so long and tastes so good you'd be a fool to let it pass you by! A fool I say!
It does take a little while to get ready, the sweet potatoes alone will need to cook for 40 mins so just chill and pop on Netflix while they bake! No worries! At the end you'll need to leave it to simmer for 20 mins, but what do you know? Perfect time to clean up before you chow down, you couldn't make this stuff up!
Ingredients:
- 2 cans red kidney beans
- 2 cans chopped tomatoes
- 1 red pepper
- 1 yellow pepper
- 2 fresh chillies
- 1 onion
- 2 cloves of garlic
- fresh coriander
- olive oil
- 2 medium sweet potatoes
- 1 tsp of cayenne
- 1 tsp cumin
- 1 tsp cinnamon
- salt and pepper
Method:
1. Pre heat the oven to 200 C.
2. Cube the sweet potatoes and sprinkle with pinch of cayenne, cumin, cinnamon, and salt and pepper. place on baking tray and pop in the oven for 40 minutes.
3. Chop the onion, peppers, and garlic finely and fry in a deep pan for 5 minutes.
4. Add the coriander, deseeded chillies and spices, then cook for 10 more minutes.
5. Stir in the beans and tomatoes, bring to the boil and simmer for 30 minutes.
6. Mix in the sweet potatoes and more coriander to your taste.
