Fluffy Pancake Stack
02:05Sunday's are made for cups of coffee, listening to RTE 1 in your pjs, and having a really long breakfast that basically spans into lunch. As long as you weren't out last night and feeling rough, these pancakes should make for the perfect Sunday pick me up before the week starts all over again.
This recipe comes from the Jamie Oliver website (quite possibly my favorite) but I've removed the greated pear (if you want to add it, you just mix it in with the batter).
Ingredients:
- 1 cup self raising flour
- 1 cup milk
- 1 egg
- Pinch of salt
- Knob of butter for the pan
For toppings I chopped up a banana and sprinkled the pancakes with cinnamon and icing sugar, then drizzled with maple syrup! Greek yogurt and berries would be a great substitute, or Nutella and banana... Go nuts!
Recipe:
1. Whisk flour and egg together, adding in milk slowly.
2. Heat butter in a large pan.
3. Spoon mixture into pan (if it's large enough you'll be able to fit three)
4. Cook untill golden brown on both sides.
