What's the worst part of being a vegetarian at Christmas time? If you ask me it's not being included in stuffing sandwiches, why does everything have to be made with bacon or sausage during the holidays? well iv had enough! I decided to create my own chestnut and thyme stuffing to put in my quorn sandwiches and take back Christmas for the vegetarians!

I'v never made stuffing before, so this recipe will have to be improved upon as the years go by, but for a first attempt I don't think I did too bad! Serves 2 for Christmas Day and leaves enough for Stephens day sandwiches... Hell yea!

Ingrediants 

- 3 slices of bread, crumbed in a food processor 

- Half an onion, diced 

- Few sprigs of thyme

- Steamed chestnuts chopped up

- Season with salt and pepper 

Recipe

1. Crumb the bread up in a food processor, add the onion, the chopped chestnuts and the thyme. 

2. Add to a Pyrex dish, season with salt and pepper, cover with cling film and place in the fridge over night. 

3. Hurray its Christmas Day! Take your stuffing out of the fridge champ! 

4. Melt the butter in the microwave and add to the stuffing. 

5. Place the stuffing in the oven, where ever you have space and cook until crispy! 

There you go! Simple, easy and quick stuffing you can prepair the day before and cook for about 10 mins before the big feast!

Simple recipe for healthy stuffed peppers (also makes for a fantastic 'left over' meal from last nights bolognese sauce!) 

This recipe makes about 4 stuffed peppers

What do I need:

- 400g can of chopped tomatos 

- tbsp of tomato purée 

- Half an onion 

- Few chopped mushrooms 

- 1/2 hand full of rice 

- Enough Quorn Beef Mince for 2 people 

- 2 tbsp olive oil 

- Salt and pepper

- 4 red peppers deseeded and cut into bowls with 'hats' 

- Optional: slice of goats cheese for the 'hats' 

How do I do it?

Preheat oven to 180 C (fan oven)

1. Cook the Quorn mince in a pot allowing it to defrost before you add your onion and mushroom to brown. 

2. Once cooked to your liking add the tin of tomato and the purée and allow to simmer for a few minutes. 

3. While the sauce is simmering, cook your rice in a separate pot.

4. Take the sauce off the heat and add rice, mixing them well. 

5. Take your peppers and fill them to the brim with the sauce/rice combo and top with 'hats' and cheese. 

6. Stick in the oven on a cooking tray/dish for about 20 mins or until the peppers look softened like in the picture. 

Serve with a side salad and a baked potato or just bring it alone for lunch in work/school.

Fair play to my mother.. Found these a palate gems in the supermarket yesterday. Iv never had a lazier curry (and so tasty!!) the Erin's Dine-ins are a gift from the heavens! How were they not invented sooner?? Honestly the whole meal took 10 minutes, if even! 

Curry:

Chop up as many veg as you like, I used: - Few florets of broccoli

- Few florets of cauliflower 

- Half an onion 

- few baby corns

- bit of mangetout 

Just follow the instructions on the back of the Erin's dine-in. 

1. Fry the veg for a minute in the oil.

2. Add the spices included in the Erin's. Fry for another minute.

3. Add the paste and the coconut milk. Simmer for another 2 minutes. 

Then chuck the uncle bens rice into the microwave for 2 minutes and it's done. So easy and actually perfectly cooked.

Naan bread was a great addition to the meal. Sprinkle with water and stick under the grill for a minute. Done. 

So simple and so quick. So delicious infact, I didn't think to get a photo of it finished. Enjoy x

Oh gosh, I'm so hungry before dinner but I don't want to ruin my appitite or snack on chocolaty treats.. What am I going to do?? Fear not, lazy vegetarian, a super simple lazy guac is here for you! 

What do we need?

- 1 avacado, destoned and mashed

- half a lime, squeezed 

- quarter red onion, diced

Mix it all together and dunk your favorite crisp! If I might make a suggestion, Thai sweet chillie sensations make a perfect partner for this zesty treat! 

We called and made a booking about a week in advance, and thank god we did because the place was packed! as soon as you enter the cosy atmosphere you are greeted with mouthwatering smells and surrounded in the sounds clinking glasses and chatter from the surrounding tables. We felt a little overdressed in our suits and dresses, arriving straight after the ceremony, as those in attendance sat in shirts and trousers, jeans and silk tops, but thats the only flaw I had with the night. The casual atmosphere doesn't really shout graduation dinner, but its perfect for birthdays or any other special occasion.

As soon as we sat down we were greeted by our waitress and ordered our drinks. They have a gorgeous cocktail menu, which includes a page of prosecco and fresh fruit concoctions... obviously I spilled my strawberrylicious down my white dress.. typical. The a la carte menu was the real winner here though, offering four vegetarian starters and an interesting flat bread vegetarian main course. I was over the moon! My sister, fellow vegetarian, and I chose different starters and shared them as we became giddy and nervous at the thought of actual choice on a night out... both were amazing and huge portions. She had a grilled asparagus bruschetta, while I ordered a quinoa and beetroot salad with courgette fritters... unreal! by the time our main course arrived we were already so full. Our sweet potato, squash and heirloom cauliflower flat bread tasted like nothing i've ever had before. It was absolutely delicious, and so unique... although probably not worth the 15e price tag. While we had no room left for dessert my mother insisted seeing as it was a special occasion, and i'm glad she did! Whats better than chocolate fondu? Nothing! Served with marshmallows, peanut butter fudge, pineapple and profiteroles for dipping, it was a great end to a great meal. The meat eaters, too, loved the dinner, devouring steaks, chicken and surf and turf. 

I only wish I had remembered to take pictures of all of the courses as they were beautifully presented. I will definitely be back! 

Super easy, super quick egg white mushroom, quorn ham and cheese omelette. 

Side note: Quorn ham is the best thing that ever happened to me. Put it in sandwiches, in omelettes, or just eat it by it's self, it's delisious! 

Ingredients:

2 eggs, whites only

Drop of milk 

Salt and pepper 

2 slices of quorn ham, diced 

4 mushrooms, chopped 

1 slice of red cheddar cheese

Who doesn't love a good stir fry? With endless combinations of veggie goodness, a healthy and delicious, guilt free indulgence is yours in a second! Hurray! 

This recipe makes enough for 2 

Ingredients 

Ingredients:

5 or 6 mushrooms

1 mini Philadelphia cheese tub (or a tbsp Philadelphia cream cheese)

Knob of butter 

Drop of milk 

Pinch dried thyme (fresh would be better)

Pinch garlic salt

Pepper 

1 bagel 

Recipe: 

1. Melt butter in sauce pan, add chopped mushrooms and fry untill golden 

2. Add Philadelphia cheese and mix well 

3. Add thyme, garlic salt and pepper 

4. Add milk and bring to the boil 

5. Toast bagel and smear with left over cheese, top with mushrooms and enjoy! 

Super quick and a tasty treat for breakie!
